A great 1 sheet pan for a busy work weeknight meal. All ingredients available at A Better Market. Cost is $19.00 if you use your SNAP benefits it will cost you $12.50. We are a family of 3. We had dinner and lunch. That is approximately $3.20 per meal. If you are using SNAP benefits it is approximately $2.10 per meal.
Ingredients
- Chicken breasts (you can use any piece you like)
- Corn on the cob cut in half
- Russet potatoes
- 1/2 onion
- 1 of each red, green, yellow, orange pepper
- 1 broccoli crown
Directions:
Preheat oven to 400 degrees. Cut chicken breast into cubes, cut potatoes into wedges, cut corn on the cob in half, slice onions and peppers lengthwise. Season with your favorite seasonings. I used base seasoning, salt, pepper, onion powder, and garlic powder. I added paprika, chili powder, and Kinder's cowboy butter seasoning. I measure with my heart. Add olive oil or avocado oil.
Align all in the sheet pan lined with aluminum foil. Bake for 40 minutes. You can warm a few tortillas for fajitas or you can just plate this and eat as is.
